This is the best way to get potatoes with a soft, pillowy inside and crispy golden outside. It takes an extra 10 minutes to cook…but totally worth it!
What you need:
- 1 pound potatoes, peeled
- 2 – 3 tbsp oil (I like sunflower oil)
- Spices (try our garden citrus blend)
- Salt & Pepper
Preheat oven to 425 F, and bring a pot of water to a boil.
Slice potatoes into ½ inc slices and if they are large into half moons. Boil in water for 10 minutes, until tender but not falling apart. Drain.
Toss potatoes in oil and spices. If you haven’t tried the garden citrus blend, check it out! Bake potatoes for 15 minutes, then flip and bake for another 10-15. Until nice and crispy. Serve warm.
