Gem Wedge Salad with Tahini Dressing

Cutting lettuce heads into wedges is great for cleaning & storing, but also can add some variety into your salad routine.

What you need:

  • 1/2 cup tahini
  • Juice and zest of 1 lemon
  • 1/4 water
  • 1 tsp maple syrup
  • 1/4 tsp toasted sesame oil
  • Optional: crisp bacon pieces, mushroom slices and/or cheese
  • 1 gem lettuce wedge per person (Click HERE for storage tip on washing & wedging lettuce heads)

Whisk all ingredients together for the dressing. Place wedges on a serving plate and drizzle with dressing. Store extra dressing in a jar in the fridge. Top salad with crisp bacon or mushrooms and cheese.
