Sweet potatoes are a great ingredient to have already cooked and ready to leap into a salad or grain bowl. Because we’ve started carrying miso products in the Marketplace this week, I wanted to create a simple and quick recipe that highlighted the sweet potato and miso…it’s a winning combo!
I have a fond memory hanging out in KoreaTown with my girlfriends eating Korean-style fried chicken and singing karaoke. This recipe is for them. I’m using tofu in this recipe but you can easily swap in chicken or other proteins. The sauce is amazing and the recipe makes more than you will need.
You can swap in any fruit preserve to make this pantry staple. I’m using an apricot orange marmalade.
This is a twist on the classic mustard glaze. I’m working with a small ham for this recipe, so if you are working with something larger, please adjust the ratios and cooking time.
